Banana Pancakes (Gluten Free and Paleo Friendly)

 

Another week of packing and preparing to move, so another short post.  I work today again on a simple recipe that creates pancakes without any flour and uses only eggs and bananas.  It is a great healthy choice for those that love their pancakes.  I hope you enjoy the recipe and sorry that I keep my post as simple as the recipe.  I do not ramble near as much today as I normally do.

 

Recipe

Here is the yummy recipe 🙂

Ingredients

Required:

  • 1 banana per person
  • 1 egg per person
  • Butter or oil (the more nonstick the pan the less you need.)

Suggested ideas

  • dash of cinnamon
  • dash of vanilla
  • a handful of the fruit of your choice
  • handful of chocolate

Peel bananas and mash them in a bowl.  They will get squished down into a paste-like substance.  At this point add in the eggs and beat the mixture until you get a pancake like dough mixture.  It will be very wet yet a bit thick.  Add in all the other things you like in your pancakes.  I like huckleberries, but strawberries or chocolate are yummy as well.

Heat a pan or griddle to medium-high heat and add in the oil or butter.  Once the oil is heated or the butter is melted pour the dough into the pan.  I normally do circles about the size of a coffee cup, but as you can see in the picture my last batch I did one big pancake.

Cook on one side about 3-5 minutes, or until the pancake is firm enough to flip without breaking.  Flip the pancake and look for it to be a golden brown.  Let it cook for another 2-4 minutes and it is done.  Enjoy your pancakes.
